Description

This one-pot lasagna soup combines all the classic flavors of traditional lasagna—savory meat, rich tomato broth, tender noodles, and creamy cheeses—into a hearty and comforting soup that’s perfect for busy weeknights.


Ingredients

1 tablespoon olive oil

1 pound lean ground turkey

1 small yellow onion, diced

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

3 tablespoons tomato paste

4 cups low-sodium chicken broth

2 cups water

1 (28 oz) can crushed tomatoes

8 lasagna noodles, broken into pieces

1/2 cup part-skim ricotta cheese

1/2 cup shredded mozzarella cheese

2 tablespoons grated Parmesan cheese

Fresh basil, for garnish


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground turkey and cook for 5–7 minutes, breaking it apart until browned.
  3. Stir in diced onion and minced garlic; cook for 2–3 minutes until softened.
  4. Season with salt, pepper, Italian seasoning, and crushed red pepper flakes.
  5. Stir in tomato paste to coat meat and vegetables evenly.
  6. Add chicken broth, water, and crushed tomatoes; stir to combine.
  7. Bring to a boil, then reduce heat and let simmer.
  8. Add broken lasagna noodles and cook for 15–20 minutes, stirring occasionally until noodles are tender.
  9. In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses.
  10. Serve soup hot, topped with a scoop of cheese mixture and fresh basil.
