Ingredients
20 mini sweet peppers, halved and seeded
8 oz goat cheese, softened
2 tbsp fresh chives, finely chopped
1 tbsp fresh thyme leaves
Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix together softened goat cheese, chopped chives, thyme leaves, salt, and pepper until well combined.
- Fill each mini pepper half with a generous spoonful of the goat cheese mixture, pressing gently to fill.
- Arrange the stuffed peppers on the prepared baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until peppers are softened and the goat cheese is lightly golden on top.
- Remove from the oven and let cool slightly before serving. Optionally, garnish with additional fresh herbs.
