Description

Soft, chewy, and naturally sweetened Banana Oatmeal Bars made with ripe bananas, oats, and no refined sugar. Perfect for a healthy snack or easy breakfast.


Ingredients

2 large ripe bananas, mashed

2 cups rolled oats

1/4 cup peanut butter (or any nut/seed butter)

1/4 cup maple syrup or honey

1/2 teaspoon cinnamon

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional: 1/4 cup mini chocolate chips or chopped nuts


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. Mash the bananas in a large bowl until smooth.
  3. Add the peanut butter, maple syrup, and vanilla extract. Mix until well combined.
  4. Stir in the oats, cinnamon, baking powder, and salt to form a thick batter.
  5. Fold in chocolate chips or nuts if using.
  6. Pour the batter into the prepared dish and spread it evenly.
  7. Bake for 20–25 minutes until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely in the pan before slicing into 9 bars.

Notes

Use very ripe bananas for maximum sweetness and flavor.

For a vegan version, use maple syrup instead of honey.

Sunflower seed butter works well for a nut-free option.

Can be stored in the fridge for up to 5 days or frozen with parchment between layers.

Warm in the microwave for 15–20 seconds to enjoy like freshly baked.
