Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
2 cups peeled, chopped apples
1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine the flour, baking soda, salt, and cinnamon.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, vanilla extract, and sour cream, mixing well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped apples and nuts (if using).
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a nut-free option, simply omit the walnuts or pecans.
This cake loaf is best enjoyed fresh, but leftovers can be stored for several days in an airtight container.
