Description

Ingredients

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp ground cinnamon

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup sour cream

2 cups peeled, chopped apples

1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine the flour, baking soda, salt, and cinnamon.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, vanilla extract, and sour cream, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped apples and nuts (if using).
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a nut-free option, simply omit the walnuts or pecans.

This cake loaf is best enjoyed fresh, but leftovers can be stored for several days in an airtight container.
